Calabacitas (Squash)
INGREDIENTS
6 summer or zucchini squash cut into small pieces
1 chopped onion
2 chopped tomatoes
1 green pepper
1/2 cup milk
1/2 pound crumbled cheese
DIRECTIONS
Fry onion, tomatoes and green pepper.
Add the squash and cook slowly until soft.
Add the milk and the cheese.
Mash all ingredients together.
Salt and pepper to taste.
